Sorry to keep you folks waiting on recipes. I had a bunch of bad after-effects from the flu shot I got on Monday of this week. I am feeling human again, but it means that my cooking was curtailed by my total exhaustion & very busy week. Here is something I made when I didn’t feel like eating leftovers I’d had before, so I made it out of several different leftovers & a new ingredient or two. This happens sometimes, and it was just what I needed that evening – it took 10 minutes, but it made me feel like I cooked, accomplished something, and fed myself something healthy.
3 medium red potatoes, boiled and cooled, chopped into small chunks
1 1/2 c. haricots vert, cooked in boiling salted water for 5 minutes and drained, (reserve water)
1 c. leftover lentils
1 clove garlic, minced
2 T. white wine vinegar
1 t. dill (no, there’s really no use to dried dill, but it was good enough on this night)
2 T. olive oil
salt and pepper
Nuke the stuff from the fridge until hot. Mix all ingredients together. Moisten with water from the beans if necessary. Serve and fall down on the couch afterward.
